Rub
- 1 tsp Worcestershire sauce
- 2 tbsp tomato ketchup
- 1 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp olive oil
- 1 clove minced garlic
- 2 tsp apple cider vinegar
Chops
- 4 pork chops/ cutlets
- 800g baby potatoes
- 1 tbsp olive oil
- Salt & pepper
Instructions
- Preheat oven to 200c.
- Toss potatoes in oil, sprinkle with salt and pepper, and then scatter onto a baking tray.
- Place in the oven for 15 minutes just to give them a head start.
- Meanwhile, mix the rub ingredients in a small bowl.
- Rub onto the pork chops on both sides and reserve some of the rub for basting.
- Take the tray out of the oven, toss the potatoes, and push them to the edge.
- Place the pork on the tray and bake for 15 minutes.
- Flip pork over and spoon over the remaining rub mix, and cook for another 10 minutes or until well caramelized.
- Remove from oven, use a brush to get the golden juices and baste it over the pork, and then pop it back in for a couple of minutes.
- Pop the potatoes, the pork chops, and drizzle with the pan juices and serve with your favourite greens.
