Rub

  • 1 tsp Worcestershire sauce
  • 2 tbsp tomato ketchup
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp olive oil
  • 1 clove minced garlic
  • 2 tsp apple cider vinegar

Chops

  • 4 pork chops/ cutlets
  • 800g baby potatoes
  • 1 tbsp olive oil
  • Salt & pepper

Instructions

  1. Preheat oven to 200c.
  2. Toss potatoes in oil, sprinkle with salt and pepper, and then scatter onto a baking tray.
  3. Place in the oven for 15 minutes just to give them a head start.
  4. Meanwhile, mix the rub ingredients in a small bowl.
  5. Rub onto the pork chops on both sides and reserve some of the rub for basting.
  6. Take the tray out of the oven, toss the potatoes, and push them to the edge.
  7. Place the pork on the tray and bake for 15 minutes.
  8. Flip pork over and spoon over the remaining rub mix, and cook for another 10 minutes or until well caramelized.
  9. Remove from oven, use a brush to get the golden juices and baste it over the pork, and then pop it back in for a couple of minutes.
  10. Pop the potatoes, the pork chops, and drizzle with the pan juices and serve with your favourite greens.
